Rice Krispie Treats

  • 3 tablespoons   butter or margarine
  • 40  regular marshmallows
  • 6 cups Rice Krispies

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add rice krispies cereal. Stir until well coated.

3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.
I sadly couldn’t take a picture – but they were awesome good 🙂

Green Smoothie

I have been reading all over the blog world about green smoothies… The idea seemed a tad peculiar, I mean who puts spinach in a smoothie? But I tend to be open minded, so I gave it a go. Here’s what I did:

175ml yogurt, I used strawberry
1 cold banana, it was very ripe
100ml frozen applesauce, just plain cooked apples really
4 spinach leaves, chopped

Blend together, and serve cold. I used my stick blender so the spinach wasn’t super fine, but it really tasted awesome. You can’t taste the spinach at all!

I am going to try have one per day, and this is a fab way to get kids to eat/drink greens.

I feel lost…

Its been over 2 weeks since I have cooked a meal… We have been so blessed by people bringing us food, that neither of us have had to do anything more than defrosting and heating, or making a salad. Its been great… but I am dying to get back to cooking and baking…

I must apologise for the lack of posts, but I am currently so busy prepping for baby – only 5 weeks to go, that food and food blogging is taking a backseat… My poor husband is lucky if he gets a decent cooked meal (volunteers welcome…).

Fruit Compote

I never buy “fancy” things like fruit compote, so when I needed it for this recipe, I had to improvise.

I used 3/4 of a can of fruit (peaches this time) and just used my stick blender to mash it all fine, to resemble compote. Easer than pie!!
