I am half Dutch, as you might know, and as such I love sweet spices. These cookies are traditionally baked for Sinter Klaas day (6 December),which is basically the Dutch Christmas. I think Sinter Klaas hands these out to children when he visits… this is what I remember from my mother.

2 cups self-raising flour
1 ½ tbsp speculaas spice
½ tsp salt
2/3 cup brown sugar
113g soft butter
4 tbsp milk
100g chocolate

Sift the flour, add the brown sugar, salt and speculaas spice to it. Stir to combine. Add the butter and milk. Start kneading until it is a supple dough, if the dough is too dry, add more milk.

Roll the dough into tiny balls and flatten them with your thumbs. Bake in preheated oven at 160 degrees C for 15 to 20 minutes.

Melt chocolate and dip the cooled cookies. Place on a piece of wax paper and wait to harden before eating.
