Sticky Apricot Nando’s Chicken

I took out chicken drumsticks and thighs for supper tonight and searched high and low for an appetising recipe to make. I couldn’t find one that I really liked, so I improvised and opened my fridge and just “gooied”.

4 thighs and 4 drumsticks (I cut the skin off, coz its gross…)
3 tbsp apricot jam
2 dashes of soy sauce (at a guess)
generous amount of Nando’s lemon and herb sauce
Porteguese chicken spice
1/2 tsp garlic paste

Just mix the ingredients together, and baste the chicken pieces with it. Place on a foiled baking tray and bake in the oven till cooked on about 150 degrees. Serve with roast veg and potatoes, or rice or whatever you wish 🙂
