Microwave Self-saucing Hot Chocolate Pudding

When I made soup for our bible study on Tuesday I had the urge to make some dessert along with it, because a hot pudding is just the thing for a freezing cold winters day. I didn’t have alot of time, as I decided to make it pretty late, so I used this recipe. Its from an ancient microwave cookbook my mom has, and I used it exactly as its written. It perfect just on its own, or served with custard or ice cream.

Syrup
1 1/2 cup boiling water
1 cup brown sugar
3 tbsp cocoa
1 tbsp marge/butter

Method
Boil everything together for 2 to 3 minutes on high in microwave and keep hot.

Dough
125g marge/butter
1 egg
3/4 cup sugar
15ml baking powder
1 1/2 tbsp cocoa
1 cup flour
1/4 tsp salt
1/2 tsp vanilla
3/4 cup milk

Method
Cream butter and sugar together, add egg and blend well.
Add dry ingredients and mix. Slowly add milk while mixing well.
Add vanilla and pour in a large bowl (i use one bowl to mix and cook) and pour boiling syrup over and cover.
Bake in microwave for 5 min on medium high.
Uncover and bake for another 5 min on medium high.
Serve hot!
