Warm Bacon and Roast Butternut Salad

I’m not the typical Sunday roast with veg and rice person, so I like to make salads and sandwiches. This goes quickly and is loved by all. Here is my recipe for my easy “Sunday roast” 😀

Serves 2 as main dish
Ingredients
1/2 large butternut, cubed
1/2 punnet mushrooms
1/2 packet lean bacon, chopped in small pieces
1 round feta
2 handfuls of fancy lettuce
cucumber (as much as you want really)

Cook the butternut until its soft, and then roast in oven with olive oil till nice and roasted.
Roast mushrooms in the same pan as the butternut.
Fry the bacon in a little bit of butter or spray and cook, till brown.
Chop lettuce and cucumber into pieces and put in a salad bowl.
Add the roasted mushrooms and butternut.
Add the bacon.
Sprinkle with crumbled feta.
Serve with a yummy salad dressing, or as I did, with guacamole…
