Bacon & Egg Pots with Brown Mushrooms

My husband is a complete and utter breakfast addict – if he an eat bacon and eggs daily, for each meal, he’s in heaven. I found this idea in a magazine once (I forget which one), and decided to try it today. His first reaction was, “That looks weird”… but after tasting it, he was in love 🙂

Ingredients
2 eggs
2 rashers of lean bacon (I use Spar’s Lean Bacon)
4 big brown mushrooms
2 slices of whole wheat bread
some butter
garlic and herbs

Use a muffin pan or ramekins. Line the ramekin with the bacon, and break the egg on top. Put ramekins on a baking tray. Grease the remaining space on the tray and put the mushrooms on it. Put a pat of butter on each mushroom and sprinkle with herbs and garlic. Grill mushrooms and bacon-egg in the oven for a few minutes till the eggs are done to your taste. Serve with toasted whole wheat bread.
