South African Corn Bread

(adapted from My Kitchen Cafe, I also used her picture, because I didn’t seem to be able to take my own good one)

½ cup maize meal
1 ½ cup flour
2/3 cup sugar
1 tablespoon baking powder
½ teaspoon salt
1/3 cup oil
3 tablespoons butter, melted
2 eggs, beaten
1 ¼ cup milk

Add dry ingredients, make a well and add oil, butter, eggs, and milk into the center. Stir until just mixed
(batter will be runny – don’t be alarmed!). Bake in a square pan at 180 degrees for about 35 minutes, till golden brown.
I also used this recipe for muffins – and put half a vienna in each so they were like corn dogs 🙂

    I think it is so amazing to find all the new SA cooking blogs!!! Corn bread is delicious, I like mine toasted with butter!!
