Hearty Potato and Leek Soup

I was really really craving a hearty wintery soup last night, so I made the best of the veg I had, and came up with this yummy filling soup.

3 leeks, sliced thinly
4 potatoes, peeled and chopped into smallish cubes
2 carrots, peeled and grated
1 chicken stock cube dissolved in about 2 litres of water
tarragon
garlic flakes
black pepper

Cook the potatoes in a little water (I didn’t cook them before hand and the soup took FOREVER!), and add the leeks and carrots. Add the herbs and spices. Add the chicken stock and boil for a while until everything is nice and mushy. Then leave to cool slightly and blend till smooth. Serve with warm fresh bread…
